The 4-star hotel overlooks the magnificent Ha Long Bay, UNESCO World Heritage, and offers 225 rooms F&B outlets feature: The Square Restaurant with international cuisine, The Lobby Lounge, an outdoor swimming pool with a poolside Bar. Conference facilities include a ballroom up to 300 seats for conferences, events and banquets and 5 meeting rooms with a panoramic view on the islands of Ha Long Bay.

    Job Specification

    • Vietnamese food speciality.

    • To be able to produce menus that are interesting and innovative

    • Develop existing F&B Concept to position Novotel Ha Long Bay as a preferred F&B venue (Restaurant Outlets, Banqueting)

    • Manages, motivates and develops the kitchen staff to produce quality meals

    • Responsible for food hygiene, safety and quality in the kitchen.

    • Responsible for meeting the department's quantitative and qualitative targets.

    • Ensure the smooth running of kitchen in whole day operation.

    • Give training and supervise lower level staff in kitchen.

    • Respect the budgeted productivity ratios.

    • Is responsible for food quality consistency

    • Control food cost daily, inventory and explain consumption differences.

    • Keep up to date with changes in culinary techniques.

    • Make daily report on product that need to be ordered and forward it to Purchasing department


    Skills & Experience

    • English is a must.

    • Vietnamese working experience is compulsory

    • Flexibility of work with urgent functions, last minutes bookings.

    • Vocational certificate or Diploma in professional cuisines

    • Minimum 3 years experience in the position of Executive Chef (Accor Group previous experience is a plus)

    • Strong team leader and management skill

    • Good ability in creation new cuisine recipes.

    • Knowledge of HACCP

    • Creative – dynamic – organized
